GRAPE VARIETIES
100% Nebbiolo, a classic late ripening local grape.
BOUQUET
Attractive and complex aromas of plum, earth and tobacco with the slightest traces of rose and truffle. It has something in common with Pinot Noir but is more powerful and less fruity.
PALATE
Full bodied with noticeable structure; the tannins are ripe so not too aggressive. Earthy plums and a savoury note make this a serious wine.
VITICULTURE

Grapes from owned vineyards Serra, Manocino and San Bernardo with few grapes bought from organic grower. Selection
 in stages, carried out three times in the 45 days before the start of the harvest. Manual harvest as late as possible.

WINEMAKING

Stalk and grape seeds removal, pressing and room temperature maceration for 2 days on average.
Duration of maceration in total 20/25 days.
 Controlled temperature fermentation at 28-30 °C. Malolactic completed.

FOOD PAIRING
Cured cheese, pork, game, lamb, flavored stews, stews with intense flavour, putanesca.
