The soil, mostly clay-limestone and clay-ferrous, is balanced in composition, slightly alkaline, rich in organic matter, with modest water availability during the summer months.
WINEMAKING
The grapes are harvested manually, then 100% of them are destemmed and fermented at a controlled temperature of 25-28 ºC for 10 days. The wine is aged for 24 months in French oak barrels and 15 months in bottle.
