VITICULTURE

WINEMAKING
The Tempranillo and Cabernet Sauvignon are hand-harvested and undergo a semi-freezing process. They are then sorted on a table and macerated at 4ºC for two days. Alcoholic fermentation with selected yeasts at a temperature of 28ºC for 7 days. Aging for 18 months in 225-liter oak barrels; 80% of the barrels are French oak and 20% are American oak. Resting in the bottle for 24 months.
