PALATE

VITICULTURE
Vines aged 25 years from Piñel de Abajo, cultivated on extremely calcareous soils with a slight slope. The soils are very poor in their fertile horizons and have a very fragile texture to favor root penetration.
WINEMAKING
Hand-harvested in boxes. Destemmed and gently crushed. Maceration reaching 30 degrees in the last days of maceration. Daily pump-overs and two délestages (separation of solid and liquid parts) at the end of alcoholic fermentation. Malolactic fermentation in stainless steel tanks, followed by aging for 12 months in barrels and 24 months in bottle before being released to the market.

Pairs well with cured cheeses, ribeye steak or other grilled meats, suckling pig, lamb, or stews with red game meat, pasta with truffle sauce.
