If a great wine can only be born from the best grapes, the work in the cellar is certainly no less important , especially if we are talking about Chianti Classico and therefore Sangiovese, which has a fundamental moment in aging in wood and which at Fattoria Montecchio follows the same identical stylistic features of 400 years ago, those of the Chianti-style refermentation, strictly in oak barrels. The cellars, in this sense, cross space and time and in the case of the Chianti cellars it can be said that they also cross the history of Italian enology, because it is precisely in the Chianti area - where the legend of the black rooster still hovers - which saw the light of one of the first Italian wine disciplines.
