The influence of the Atlantic Ocean in this climate, with cold winters, warm summers, and long mild autumns, results in slow grape ripening. The soil, mainly clay-limestone and clay-ferrous, has a balanced composition, slightly alkaline, rich in organic matter, with modest water availability during the summer months.
WINEMAKING
The grapes are harvested manually in October, destemmed by 75%, and fermented at a controlled temperature of 25-28 ºC. Long maceration and light pressing in a basket press. Aged for 14 months in French oak barrels.
