BOUQUET
Red and black fruit notes (black cherry, blackberry and redcurrant) with spicy hints of thyme, bay leaf and rosemary, as well as layers of graphite, slate and liquorice undertones.
PALATE
Smooth and enveloping with medium-to-high acidity, ripe and polished tannins, well-integrated oak and a long, fruity finish.
VITICULTURE
Grapes are cultivated on old vines located on particularly well-exposed terraces of clay-limestone soils with a few gravel pockets.
WINEMAKING
Grapes are picked by hand and processed on a double sorting table (first the bunches and later the berries). Only intact berries are chosen. Tempranillo and Graciano wines are made and aged separately, preserving the fruit character of Tempranillo and enhancing the complexity of Graciano with its spicy character. Alcoholic fermentation in concrete tanks is followed by 14-month ageing in 225-litre Bordeaux barrels made with 65% French and 35% American oak.

Cured cheese, blue cheese, goat cheese, veal meat, game, stews with intense flavour, chocolate, barbecue meat.
RECOMMENDATIONS
