BOUQUET
Of great intensity and aromatic complexity, ripe black fruits such as blackberry, plum, floral touches of violets and scrubland. Good balance with wood, notes of vanilla, cloves and toffee.
PALATE
Very fruity, powerful and tasty. Very fresh fruity sensations. Long finish with spicy notes of wood.
VITICULTURE
Cultivated in the districts of La Aguilera, Quintana del Pidio, and Moradillo de Roa, this is where their passion to obtain the best grapes, on each vine, becomes a reality.
They control approximately 110 hectares of vines between estate-owned and outsourced vineyards, at an altitude of between 830 and 950 metres above sea level, in chalky-clay, sandy and stony soils.
Checked and closely monitored throughout the growing cycle so that only the best clusters are left on the vine. Vines tended with painstaking care from a commitment to rational viticulture and a respect for the environment.
WINEMAKING
Care, perfection and loving attention to what they do can be seen from the very way they transport the clusters of grapes, in small plastic crates in the case of the oldest vineyards and in small trailers for younger vines. As well as selecting on the vine itself, ALL Luis Cañas wines undergo a double selection process.
First they pass through a sorting table where the clusters are selected by hand and subsequently, each individual berry is checked on a Mistral table, so that only those in perfect condition continue in the process.
The most stringent winemaking process. They select the French- and American-oak casks, from among the best cooperages in the world. The cask stock is renewed continuously, so the average age is three years. A real luxury.

Jam and strong cheeses, pork, veal meat, chicken - turkey, lamb, offal, birds, soft stews, flavored stews, stews with intense flavour, chocolate, fish paella rice, risotto, meat and fish paella, thai rice, barbecue meat, fish, barbecue of vegetables.
