GRAPE VARIETIES
80% Tempranillo and 20% Cabernet Sauvignon.
BOUQUET
Concentrated yet delicate aromas of black fruits with some pleasant spices from French oak.
PALATE
Complex, intense and at the same time fine and elegant thanks to the blending in Cabernet Sauvignon. Well-balanced with a long finish.
VITICULTURE
Vines are cultivated at the altitude of almost 1.000 meters on calcareous-loam soils in the area La Parrilla (Valladolid).
WINEMAKING

Pre-fermentation maceration for 4 days at 15ºC. Alcoholic fermentation with the use of indigenous yeast pie de cuba. 18 days of maceration with pumping over up to a maximum of 3 per day depending on the state of fermentation. The varieties are elaborated independently and the mixing of the two takes place at the end of the aging. Aged for 14 months in French and American oak.

Cream cheese, aged cheeses, blue cheese, goat cheese, veal, game meat, lamb, stews, grilled meat, grilled vegetables.
RECOMMENDATIONS
Recommended serving temperature: 15-17º C.
