GRAPE VARIETIES
Tempranillo, Graciano, Garnacha, Bobal, Viura, Malvasía riojana, Moscatel, Murgones.
BOUQUET
Unusual aromatic palette, including violet candy and liquorice root. Striking notes of iodine, chalk and hints of pepper, evoke the reddish soils of the vineyard. The ripe black fruit (with nuances of figs and plums) opens up to sweet spices. Attractive dairy and fine wood notes, which are perfectly balanced and integrated, are also present.
PALATE
Silky and round, tannins and acidity are balanced and in perfect harmony. After the cedar and tobacco notes, the red fruit is once again evident, resulting in a rich long-lasting finish.
VITICULTURE
El Regollar vineyards that occupy 0.80 hectares are located in Villabuena de Álava, next to a forest, at an altitude of 526 metres above sea level. The producer has adopted sustainable practices designed to preserve the natural environment (nesting shelters for birds, drinking fountains for animals, insect shelters, absence of herbicides and pesticides, etc.). The vines that were planted in 1920 are cultivated on ferruginous loam soils, with distinctive red sand. The traditional bush training is excercised.
WINEMAKING
Grapes were harvested by hand in small boxes before being stored in a refrigerated chamber for 12 hours to ensure correct colour stabilisation. Double selection table for bunches and grapes. Alcoholic fermentation in an open French oak vat with gentle punch-downs. After devatting, the wine underwent malolactic fermentation in two 500-litre French oak barrels and one 225-litre American oak barrel and was then aged for 17 months in the barrel.

Semi-cured cheese, cured cheese, blue cheese, goat cheese, veal meat, lamb, offal, tuna, flavored stews, stews with intense flavour, meat paella rice, barbecue meat, fish, bolognese.
RECOMMENDATIONS
Recommended serving temperature: 15ºC-17ºC.
