PALATE

VITICULTURE
Old vines of over 45 years planted in low-yielding soils (4500 Kg. per hectare) with good orientation and exposure to the sun in Villabuena, Samaniego and Leza.
WINEMAKING
Grapes are carefully selected and handpicked in small boxes. Double selection table for bunches and berries. Malolactic fermentation in new barrels, followed by 20-months ageing in new casks of 50% French 50% American oak.
FOOD PAIRING
Cured cheese, blue cheese, goat cheese, veal meat, lamb, stews with intense flavour, grilled meat.
