Selected harvest from old vineyards. Grapes go through a previous maceration and long fermentation at a low temperature to extract aromatic polyphenols. Ageing on its lees makes the wine more structured. Fermentation and ageing take place in ovoid concrete tanks, helping the lees to merge with the wine.
