PALATE

VITICULTURE
The soils of its vineyards are clay-limestone and clay-ferrous, located at 600 meters altitude. Grapes come from vineyards over 35 years old exposed to weather changes that cause slow ripening and bring balance and elegance to the wine.
WINEMAKING
The grapes are manually harvested, followed by a short maceration, then fermentation for 11 days at a controlled temperature of 13-17 ºC. The wine is then left in contact with its fine lees for 3 months where it gains complexity.
PAIRS WELL WITH
Perfect to accompany seafood and fish such as sea bass, sea bream, prawns, langoustines, octopus, squid, seafood paella, grilled vegetables, legume salad, seafood cream soup, fish soup, chicken broth, and white meats.
