VITICULTURE
The wines from Bodegas Trenza are crafted by Danish brothers David and Jonas Tofterup, who have trained along different paths but share knowledge and experiences to create the best possible product together.
WINEMAKING
Harvest takes place in mid-October when the grapes have begun to dry out and have lost much of their weight. This method is ideal for Monastrell, as the resulting natural sweetness helps soften the robust tannins typical of this variety. The grapes undergo a delicate destemming process before selected yeasts are added to initiate fermentation. This process occurs in stainless steel tanks where temperature is carefully controlled. During fermentation and maceration, the musts are subjected to gentle pump-overs periodically to enhance the extraction of aromatic and coloring compounds. Once fermentation is complete, the wine is racked off, and the pomace is pressed. At this stage, the dried grapes release subtle traces of unfermented sugars, contributing to the wine's distinctive dry character. Subsequently, the wine undergoes aging for 6 months in used French and American oak barrels, adding complexity and elegance without overpowering its fruity profile.
