VITICULTURE
Bodegas Trenza’s wines are created by the two Danish brothers, David and Jonas Tofterup. The two brothers have chosen two different paths to become skilled winemakers. They have shared and braided their knowledge and experiences together to create the strongest and most characteristic Trenzas possible.
WINEMAKING
The grapes are picked manually at the end of October, once they begin to raisin on the vines concentrating sugars and flavors. Grapes go through a gentle de-stemming of the slightly dehydrated grapes and then they are inoculated with selected yeasts. Fermentation takes place in temperature-controlled stainless steel tanks where the musts are periodically gently pumped over during the fermentation and maceration. After the fermentation the wine is racked and the skins are pressed. During this stage the raisined grapes release traces of unfermented sugars, giving the wine its unique off-dry character. The wine is aged for 6 months in French and American oak casks.
FOOD PAIRING
