GRAPE VARIETIES
Monastrell
AROMA
Its aroma is intensely concentrated, with notes of black cherries, blackberries, and black plums, balanced with hints of herbs and spices like thyme and licorice. Additionally, nuances of toasted oak, coffee, and dark chocolate are appreciated. Softer notes of lavender and sweet spices add complexity to the wine's profile.
PALATE
On the palate, Nymphina Organic Monastrell offers a dry yet silky texture, filled with ripe berries and toasted almonds. The mature tannins are perfectly balanced with its full body and pronounced flavors, culminating in a long and delicious finish
VITICULTURE
The grapes come from carefully controlled and selected certified organic Monastrell vineyards in Yecla. The vineyards are between 45 and 50 years old, south-facing, located in the elevated area of Campos Arriba, at 850 meters above sea level
WINEMAKING

The grapes were hand-harvested during the first two weeks of October from 100% certified organic vineyards. After careful destemming and crushing, the grapes were cold macerated for 4-5 days at 5ºC. Fermentation and maceration lasted for 12-14 days, with the musts being pumped over and manually punched down several times a day. Subsequently, racking was done, and it aged for 6 months in French oak barrels.

Nymphina is a versatile wine that pairs perfectly with a variety of dishes. Enjoy it alongside glazed pork chops, roasted duck, or roasted beef to enhance its flavors.
