The grapes were hand-harvested during the first two weeks of October from 100% certified organic vineyards. After careful destemming and crushing, the grapes were cold macerated for 4-5 days at 5ºC. Fermentation and maceration lasted for 12-14 days, with the musts being pumped over and manually punched down several times a day. Subsequently, racking was done, and it aged for 6 months in French oak barrels.
