Youthful notes of ripe plums, cherries, fresh crushed herbs and a hint of sweet spices.
PALATE
Mellow, with soft ripe tannins and a gentle natural sweetness which is balanced with fresh acidity and a juicy finish.
VITICULTURE
The old dry-farmed Monastrell vineyards at the altitude of 600-800 metres above sea level. The yields are reduced thereby resulting in grapes with outstanding potential from the start. The grapes are picked manually at the end of October, once they begin to raisin on the vines concentrating sugars and flavors.
WINEMAKING
Grapes go through a gentle de-stemming and then selected yeasts are added. Fermentation takes place in temperature-controlled stainless steel tanks where the musts are periodically gently pumped over during the fermentation and maceration. When the fermentation is ended the wine is racked and the skins are pressed. During this stage the raisined grapes release traces of unfermented sugars, giving the wine its unique off-dry character. The wine is aged for 3 months in used French and American oak casks.

Pork chops and neck, roasted duck or turkey, grilled meat, mushroom risotto.
