Pre fermentation and post fermentation maceration is carried out for 30 days, with daily traces, and at a temperature between 28ºC and 30ºC. After the malolactic fermentation in the barrel for a month, the tanks are transferred to the barrel for stabilization and aging in the barrel for a minimum of six months and a maximum of 14 months.
