Pre fermentation and post fermentation maceration is carried out for 30-35 days, with daily traces, controlling the temperature up to a maximum of 28ºC. After malolactic fermentation in the barrel, it is allowed to stand for two months (controlled temperature). Then the transfer is made to the tank for stabilization and then to aging in the barrel, where it will remain a minimum of 12 months (controlled temperature). Finally, it goes to aging in the bottle where it finishes refining for a minimum of 18 months.
