100% Pinot Noir.
BOUQUET
Ripe red and black fruits mixed with violets, roses and some very elegant toasted French oak undertones.
PALATE
Medium body, very expressive and bright. Complex, we-balanced, with persistent finish.
VITICULTURE
Vines are cultivated at the altitude of almost 1.000 meters on calcareous-loam soils in the area La Parrilla (Valladolid).
WINEMAKING

Prefermentative maceration for 5 days at 14 ºC. Alcoholic fermentation using an indigenous type of yeast (pie de cuba). 10 days of maceration with very short and gentle pumping over twice a day. Maximum fermentation temperature of 25 ºC. Then 18 months of ageing in French oak barrels.

FOOD PAIRING
Soft cheese, fresh cheese, semi-cured cheese, chicken, turkey, poultry, game, lamb, rice-based dishes, grilled vegetables.
RECOMMENDATIONS
Recommended serving temperature: 16 º C.
