After being selected and harvested, the grapes release a pinkish color during the overnight maceration of the must in steel tanks at about 4-5 ° C. This particular process (cryomaceration) extracts the aromatic precursors from the grapes. Fermentation takes place at a controlled temperature of 16-18 ° C in order to preserve the characteristic fruity scent and refined sensory notes. The wine is then transferred to steel tanks where it refines on the noble lees and improves its flavours. After a few months the clarification and the final filtration take place.
