The soils of its vineyards are clay-limestone and clay-ferrous, located at 600 meters altitude. Grapes come from vineyards over 35 years old exposed to weather changes that cause slow ripening and bring balance and elegance to the wine.
The grapes are manually harvested in the first half of October. The free-run juice and the juice from grape pressing ferment at a controlled temperature between 13ºC and 17ºC.
