An explosion of fruit on the nose with a predominance of black fruit (blackberries), cherries, and licorice. It is a fruity bomb, dominated by black fruit, blackberries, cherries, and also licorice, combined with toasted notes from the barrel and earthy tones due to the influence of calcareous soil.
PALATE
This reserve red wine has a very good body and perfectly integrated acidity. With very rounded tannins, it is luscious and has high persistence.
VITICULTURE
Pico de Luyas is the peak located behind the winery (850m, south-facing) and is very characteristic of Ribera del Duero, dominated by a high area where calcareous soils prevail, and a slope where limestone merges with clay, giving rise to the best vineyards in the DO.
WINEMAKING
Hand-harvested with double selection of bunches in the field and at the winery. The grapes are cooled to 10ºC before processing to avoid oxidation. Gravity-fed fermentation. Daily manual punching down (using a stick to push down the cap and submerge it in the liquid). Spontaneous alcoholic fermentation. Malolactic fermentation in barrel with daily stirring of its fine lees. Aging for 16 months in 225L barrels without racking. Bottled without filtering or clarifying.
PAIRS WELL WITH
Pairs well with cured cheeses, roasted lamb, grilled lamb chops, stews, and both large and small game meat.
