VITICULTURE
Ramón do Casar is located on a terrace at the foot of the Castrelo de Miño reservoir, in Prado (Ourense, Galicia – Spain). The wines belong to the Ribeiro Designation of Origin, situated at the convergence of the Miño, Avia and Arnoia river valleys. A slightly continental climate, combined with prevailing air currents, creates a significant temperature variation between day and night, promoting slow ripening, aromatic intensity, and natural freshness.
WINEMAKING
Grapes are hand-selected at the beginning of September. The must is obtained through gentle pressing and a brief maceration. After a two-day cold static settling, fermentation begins in stainless steel tanks at controlled temperatures for 12 to 14 days. Once fermentation is complete, the wines are racked into clean stainless steel tanks where they remain on their fine lees for 2 to 3 months. In February, the final blend of Treixadura, Albariño and Godello takes place. A week later, the wine is clarified and, by the end of the month, filtered and bottled. It then rests in the winery for one month before being released to the market, at the discretion of the winemaker.
