The soils of its vineyards are clay-limestone and clay-ferrous, located at 600 meters altitude. Grapes come from vineyards over 35 years old exposed to weather changes that cause slow ripening and bring balance and elegance to the wine.
The grapes are manually harvested, followed by maceration, then fermentation in new French oak barrels at a controlled temperature of 15-17 ºC. The wine is then left in contact with its fine lees for 6 months with periodic batonnages, acquiring mouth-coating richness and aromatic complexity.
