AROMA
Exotic and aromatic notes with hints of fennel, hay and green apple, layered with a citrus backbone.
PALATE
Fresh, balanced, smooth and long. Notes of tropical fruit and fennel stand out, with a background of white fruit.
VITICULTURE
Verdejo from Finca Los Almendros, with poor, shallow soils rich in gravel.
WINEMAKING
Cold pre-fermentation maceration for 4 hours, followed by gentle pressing under low pressure in an inert atmosphere. Fermentation takes place at controlled temperature in concrete tanks, with a minimum of 3 months on lees.
FOOD PAIRING
Ideal with seafood and fish. Also pairs perfectly with rice dishes, pasta and cheeses.
RECOMMENDATIONS
Best served at 5–8°C.
