VITICULTURE
The CAMU family has exploited its 13 hectare holding in the famous terroir of Chablis for 7 generations and applies all its accrued wisdom and experience to the production of some very fine wines, which are renowned for ageing. They have won many accolades over the years. Among the elite of the world's fine wines, CHABLIS can be defined as a dry, crisp, fruity, mineral, white wine. It comes exclusively from the Chardonnay grape variety, the only one permitted, which is cultivated on calcareous soils with lots of clay, known as "Kimmeridge". This, along with the continental climate of hot summers and very cold winters, helps the vines to assimilate all sorts of nuances, especially mineral ones.
