VITICULTURE
Plots bordered to the north by the Sierra de Codés and to the south by the Ebro River. The area's microclimate, along with its soils, create the perfect conditions for growing these varieties and lay the foundations for an elegant, complex white wine with bright acidity. Finca Cubillas: 1.4 Ha of Garnacha Blanca. 410m. of altitude. Rainfed farm poor soils with gravel, limestone. Low returns. Finca Majalpozo: 1 Ha of White Tempranillo. 375m. of altitude. Calcareous clay soil, more structured, which gives this wine a greater sensation of volume in the mouth.
WINEMAKING
Harvest of the selected plots at dawn. Obtaining the flower must by direct draining without pressure. Controlled fermentation at low temperature for a month. Subsequent racking with conservation of its fine lees kept in suspension. To the complexity provided by the mixture of plots and complementary varieties, is added the maturation in the cellar with its lees for 3 months in different continents, tanks and barrels of different origins. Mild filtration through plates and bottled in February.
FOOD PAIRING
