VITICULTURE

Key vineyards include Barracks, Motukawa, Estate, Mustang, and Brook Street.
WINEMAKING
The grapes are hand-picked and whole-bunch pressed, a traditional approach to keeping the wine fresh and crisp. The resulting juice goes into barrels for fermentation, along with wild yeasts that build complexity and texture. The wine ages for 11 months, with malolactic fermentation used selectively to provide balance.
FOOD PAIRING
Goes perfectly specially with seafood. Try it with Caprese salad, soft cows’ cheeses, cream sauces or anything smoked or chargrilled.
