VITICULTURE
Remarkable flint terroir on several plots of Sauvignon Blanc. The clay-siliceous terroir known as " Silex " gives the wine a marked and straightforward personality and characteristic flinty notes . Four of their 40-45 year old vine plots thrive on this very special terroir. The grapes are harvested at optimal ripeness and transferred to the press by vibration.
WINEMAKING
After a long, low-pressure pneumatic pressing, the juice flows by gravity from the press to the tank to avoid handling the grapes and juice. This is followed by a 12-hour cold static settling (natural settling of suspended particles) and then alcoholic fermentation in temperature-controlled stainless steel tanks. This wine is aged in stainless steel tanks for 6 to 7 months on its fine lees to develop aromatic richness .clarified, stabilized, and bottled by them at the estate.
