The late harvest is done in October, when the bunches reach a concentration of 356 grams per litre of natural grape sugar. The wine is aged in oak barrels. The original qualities of this wine allow its pairing to be versatile, being able to enjoy it, both in appetizers based on nuts, foie gras and caviar, as well as in dessert, being the ideal company for tea pastries and pastries in general. VITICULTURE
LATE HARVEST: Harvested a month later than other grapes, thus the sugar concentration is naturally increased – both due to maturity and natural dehydration.
WINEMAKING
The grapes go through cold pre-fermentation maceration. The sugar in the must is consumed by the yeasts and got transformed into alcohol. Fermentation ends by itself due to the concentration of alcohol, leaving a significant amount of sugar in the wine. Later the wine spends 12 months on its lees in new French oak barrels.
