Vineyard management is carried out by carefully protecting the aromatic profile, avoiding losses due to water stress, favoring balance and freshness. Precision viticulture is carried out. All wines from Príncipe de Viana benefit from constant support in R&D&I, such as the use of drip irrigation, weather stations, which allow continuous improvement processes in grapes and therefore in wines.

LATE HARVEST: Harvested a month later than other grapes, thus the sugar concentration is naturally increased – both due to maturity and natural dehydration.

The grapes undergo a cold pre-fermentation maceration. Yeasts consume the sugar in the must and transform it into alcohol. The fermentation ends on its own due to the alcohol concentration, leaving a significant amount of sugar in the wine. Subsequently, the wine spends 12 months on its lees in new French oak barrels.

Creamy soft cheese, quince, pastries, pasta, nuts, foie gras, caviar, and nougat.
