AGED: 12-month ageing on its own fine lees in oak barrels.
This wine is fairly unusual being a sweet Chardonnay. It comes from the very special vineyard plot known as San Nicolás, No. 5 of Cadreita. The late harvest is done in October, when the bunches reach a concentration of 356 grams per litre of natural grape sugar. The wine is aged in oak barrels. The original qualities of this wine allow its pairing to be versatile, being able to enjoy it, both in appetizers based on nuts, foie gras and caviar, as well as in dessert, being the ideal company for tea pastries and pastries in general. Complex nose of preserved pineapple, apricot, quince, orange peel and rosemary honey. Classical barrel-ageing notes of vanilla, fresh-toasted almonds and dried figs.
The overall impression is refreshing, lively and bursting with fruit flavours. The palate is unctuous and rich, with an exceptionally long finish and well balanced acidity.

They harvest at night in order to minimize oxidation of the grapes and thus prevent possible loss of aromas. The aim is to preserve the freshness and integrity of the grapes on arrival at the winery.
PARTIAL FREEZING OF THE BERRIES
By this method, they freeze just the skin of the berries, not the pulp, in order to break the skin cells where the elements that give a wine colour, aroma and structure are found, ensuring maximum extraction of fruit character.
THE SELECTION TABLE
After a thorough destemming, and before the grapes go through the maceration and fermentation processes, they carry out a second selection of the best berries on vibratory selection tables.
