VITICULTURE
Vineyards from their Finca La Asperilla, located in the municipality of Clavijo. The average age of the vineyards is between 40 to 50 years. It also uses Tempranillo from Sonsierra (municipalities of Ábalos and San Vicente) and Garnacha from the municipality of Cárdenas (high Najerilla). Soils are clay-limestone with iron components and sandy clay with a lot of limestone.
WINEMAKING
Selected harvest. Cold pre-fermentation maceration after which the wines ferment with native yeasts at temperatures below 25ºC to preserve freshness and fruity character. Aged for 12 months in French, American, and European oak barrels, plus 15 months in bottle.
