It is a dense and intense wine from organic farming in vines of 40 years (the oldest of Bodegas Attis). These vineyards are oriented to the northwest and are tiled in a system of traditional granite pergolas that protect the plant from moisture and gives it a greater growth area. The soil on which these vines grow is made up of a suitable proportion of stone and clay sand. This allows the plant to develop roots longer than what can be expected in a normal wine from D.O. Rias Baixas.

High fruity fruitiness, toasted touches of nuts and spices, mineral notes.
PALATE
Its strength is enhanced by its magnificent acidity and great aromatic presence. Wine with great personality and potential.
VITICULTURE

Vine arbour. Single vineyards, the family’s oldest vineyard. Soils of granitic Entisoles of sandy – clayey character. Orientation in the north-western part. Organic farming.

WINEMAKING

Hand harvest picking in boxes of 15 Kg perforated. Selection of grapes. Complete destemming. Selection of the first juice. Debourbage with cold temperature. Alcoholic spontaneous fermentation in French oak barrel (228 and 500 L.). Ageing on lees in the same barrel for 12 months with “batonnage”. Fining with isinglass. Tangential filtration.

FOOD PAIRING
Olives, assorted canapes, sushi, sea bass, raw shells, octopus, scrambles and omelettes, mix of different tapas, fried fish, fish paella rice, thai rice, fish, barbacue of vegetables, gazpacho and salmorejo, chicken soup, soup of onions, vegetables.
