VITICULTURE
100% organic and biodynamic cultivation. The Can Sumoi vineyards were covered with natural compost, worked with expert and careful hands; and the lost vines were recovered to produce natural wines of altitude. WINEMAKING
Dertemming and gentle treading in an inert atmosphere. Alcoholic fermentation in stainless steel tanks at a controlled temperature of between 22 and 28 °C, with indigenous yeasts from the vineyard and skins for 15 days. Malolactic fermentation took place spontaneously.
