VITICULTURE
100% organic and biodynamic cultivation. The Can Sumoi vineyards were covered with natural compost, worked with expert and careful hands; and the lost vines were recovered to produce natural wines of altitude. Forestry and fauna management was also carried out to recover biodiversity. Vineyards with spontaneous plant cover, which gives biodiversity, fertility and life to the soil. Short goblet pruning. Use of plant infusions as phytotherapy to minimise the use of copper and sulphur.
WINEMAKING
Dertemming and gentle treading in an inert atmosphere. Alcoholic fermentation in stainless steel tanks at a controlled temperature of between 22 and 28 °C, with indigenous yeasts from the vineyard and skins for 15 days. Malolactic fermentation took place spontaneously.
