A selective criterion in the vineyard and meticulousness in choosing the optimal grape are key to starting winemaking. Vineyards located in Valtuille de Arriba, with an average age of 30 years and at 575 m. altitude. Clay and mineral soil. Manual harvest and manual selection of bunches in the winery.

WINEMAKING

Low temperature fermentation for 30 days in new 500-liter French oak barrels. Movements by gravity and aging in the same barrels for 2 months on its lees with daily batonage. 13 ˚C.
