This white wine is made from the Sauvignon blanc grown on very limestone soils on the other side of the river from Pouilly which is the 15 hectare land that the Reverdy family has been mourning for several generations in the Loire, central France. This land was once under the sea and it shows in the minerality of this wine. Know more
Attractive and fresh aromas of green leaves, with subtle traces of exotic fruit and minerality.
PALATE
Crisp, fresh and dry with a gently tangy, slightly mineral edge which gives it complexity at the same time as being refreshing and friendly.
VITICULTURE
Firstly, the vast calcareous clay slopes locally referred to as «Terres Blanches» which produce wines that are more complex, more robust and with more fat from the clay. Then there are the dry, stony limestone hills locally known as «Caillotes» producing fruity wines with floral nuances, very fresh with lovely acidity. Their Sauvignon Blanc is at its best in these two types of soil. The art of the winemaker is to achieve the optimal balance in the wines from these terroirs (soil, climate, vines, etc)
WINEMAKING
The grapes are pressed within 3 hours of harvesting. After settling for 12 to 24 hours, the must is placed in stainless steel, temperature controlled tanks where fermentation takes place at between 15 and 20°C. At the end of fermentation, the first racking is carried out to remove the first lees. They begin bottling in the spring, following blending, clarification and stabilization treatments.
