VITICULTURE
Nero D’Avola is the most Sicilian of grapes, originating in Syracuse but now found in all the wine-making areas of the island. It prefers clay-like terrain and is very sensitive to excessive dryness and too much exposure to sunlight. The vines are cultivated using espalier system, with an average density of planting of 4.500 plants per hectare.
WINEMAKING
Harvesting of grapes with perfect aromatic and polyphenolic ripeness, destemming and alcoholic fermentation with the skins for 6-8 days at 22-24°C, malolactic fermentation with selected yeast, ageing of 6 months in oak casks.
