BOUQUET
Complex, fine and elegant. Red fruit aromas predominate with very delicate spicy tones, typical of aging.
PALATE
Expressive and fresh with a great balance. Powerful and at the same time delicate thanks to the freshness and slow maturation of the grapes. Long finish with very pleasant and persistent silky tannins.
VITICULTURE
Vineyards are located in four different geodesic points of the Ribera del Duero - La Aguilera, Baños de Valdearados, Peñaranda, Moradillo de Roa. La Aguilera is situated in the area of the geodesic point of Valdevicente at 875 meters of altitude with sandy soils that attribute finesse and freshness to the grapes. Baños de Valdearados, in the geodesic point of Gallucazo at 920 meters of altitude, on a more clayey but very fresh soil, which results in a finer but persistent tannin and also great freshness. Peñaranda, in the geodesic of the Casqueras at 940 meters of altitude, on chalky sandy soil with the presence of stones that gives the wine muscle and silkiness, as well as a lot of black and red fruit. Moradillo, in the geodesic point of Campejon at 950 meters of altitude, and in a clay soil which attributes to very fine and noble tannin.
WINEMAKING
Grapes are harvested by hand in boxes and go through a selection table. Alcoholic fermentation with daily punching down. Fermentation temperature between 24 and 26 ºC. Malolactic fermentation in barrels of 500 liters and concrete tanks. Aging in 225, 500 liter oak barrels during 12 months and refining in a concrete tank. Natural stabilization before bottling without aggressive filtration.

Tapas, canapes, soft cheese, semi-cured cheese, fresh cheese, pork, chicken, turkey, poultry, stews, scrambles and omelettes, rice-based dishes, grilled meat, grilled vegetables, chicken soup, pasta pesto, pasta bolognese, pasta puttanesca.
