VITICULTURE

Result of the coupage of three unique plots with very unique soils. 85-year-old glass vineyards, located in Valtuille de Arriba at 650 m. altitude. Stony soil with slate, quartzite and other minerals. Manual harvest in boxes and subsequent selection in the winery.

WINEMAKING

In its red wines, the must together with the skins is homogenized and undergoes a cold maceration process for around 48-72 hours. Alcoholic fermentation occurs naturally, controlling the temperature and density of the wine at all times. During fermentation, pumping over and popping operations are carried out manually. The elaboration and aging of each plot is done separately, always respecting the unique contributions of each one. Prefermentation and fermentation at controlled temperature in stainless steel tanks. 12 months in medium toasted French oak barrels. 14.5 ˚C.

Ideal to take in Barbecues and with cured cheeses, pork, veal, game meat, lamb, poultry.
