Complex and original, with evident notes of black fruits, blackberry and red cherry combined to perfection with the hints of vanilla and tobacco leaves, toffee, eucalyptus.
PALATE
The intensity of the fruits, combined with the soft tannins, result in elegance, smoothness and harmony with a persistent aftertaste.
VITICULTURE
Grapes come from a very specific vineyard, “La Encina” at 975m above sea level. Sandy, chalky soils with lots of clay help to generate concentration and varietal character.
WINEMAKING
Grapes go through three scrupulous selection processes: in the vineyard - during the harvest phase, which is carried out manually, on a selection table when entering the cellar and, finally, by a vibrating table, where the berries that are not ripe enough, are eliminated. The grapes are vinified through the first phase of alcoholic fermentation and a subsequent maceration, which is carried out for three weeks. Before bottling, the wine undergoes malolactic fermentation in barrels. Then it is aged for 12 months in new French oak barrels and then is refined for a further six months in the bottle.
