VITICULTURE
In Particular collection, wines tradition and innovation come together. It is a tribute to the winery origins, when winegrowers made the wine for themselves. A limited production, inspired by ancestral customs, and ready to be enjoyed in the 21st century.
WINEMAKING
The pre-fermentation maceration is carried out cold for five days, at a temperature of 10 ° C. The temperature progressively increases, reaching 28-30ºC, leaving it to macerate for another 30 days, making daily traces until the end of fermentation. Then the malolactic fermentation is carried out in storage, transfer and stabilization. For later aging in American oak barrels for a minimum of 6 months for subsequent bottling.
