VITICULTURE
Grapes are harvested from one of the younger plots called "Los Miles" in a low zone at the altitude of 760-800m above sea level. The vines are somewhat from 6 to 10 years old, cultivated on Sandy loam soils with pebbles.
WINEMAKING
Classic vinification, 8 days of maceration, 5-6 pumping over a day, malolactic fermentation in tanks. No ageing in order to preserve freshness and fruitiness.
FOOD PAIRING
