Vines are cultivated in many micro-plots, using a goblet pruned system, in hillside areas with very poor soils, as a result the grapes are small, loose and very concentrated. Only the best vines of more than 60 years old are selected from each plot.
Grapes are harvested using boxes. In the winery they go through a double selection table (bunches and then berries). During the process, only the intact berries are chosen. Once the alcoholic fermentation is complete, the wine is transferred to new French oak barrels, where the malolactic fermentation takes place. Ageing on lees is carried out to give the wine roundness and smoothness, achieving greater integration between the wine and the wood. The final step is ageing of 22 months in new French oak barrels.
