Intense and complex with powerful black fruit aromas and a hint of licorice. It is beautifully balanced and integrated with all sorts of subtleties such as spicy notes of vanilla and cedar from the oak and a certain fresh minerality.
PALATE

VITICULTURE
Grapes from vines of over 80 years old, situated in high areas, in poor soils, which results in extremely limited yields.
WINEMAKING
Grapes are harvested manually, in 11 kg crates with side holes for ventilating. Then they are chilled in a cold store at 5 C so as to macerate them cold and thereby prevent the risk of fermentation starting or the grapes getting damaged. Selection in a two-stage sorting process: first are checked by hand the clusters and then the separate berries. Alcoholic fermentation in 7.000 kg french oak vats is followed by malolactic fermentation in new barrels and ageing in new French oak casks for 27-months.
