Carlos Serres Tempranillo uses all the grapes of the Tempranillo variety from agreements that the winery maintains with an exclusive group of winemakers from the surroundings of Haro. The vineyards have an age of between 10-20 years. The winery jointly manages the cultivation of vineyards to ensure maximum fruit quality, with continuous monitoring throughout the growing season. They are obtained from a manual harvest, in mid-October. The grapes are covered in stainless steel tanks after a light destemming and crushing. After a cold maceration, the must ferments at a controlled temperature of no more than 25º C for 10 days to extract all the varietal character and preserve the properties of the grape as much as possible. The soul of Carlos Serres wines is in their vineyard: Finca El Estanque. Covering 60 hectares in south-eastern Haro, it became a true landmark when espalier training was implemented in the early 1980s.
The training system increased leaf surface exposure, thereby enabling better ripening in all grape varieties and improved cluster aeration.
This allows for more environmentally-friendly growing practices and fewer treatments. It has mostly chalky-clay soils with a high gravel content, perfect for growing Tempranillo, Graciano, Mazuelo, Maturana Tinta and Viura, which are used to make their Reservas, Gran Reservas and the limited production Onomástica.
In a style that blends the history of this century-old firm with contemporary design, the winery preserves the historical and traditional heritage of its founder. Respect for their origins without relinquishing the Carlos Serres avant-garde style.
The wines are vinified in concrete tanks to ensure maximum preservation of varietal fruit expression. This is achieved through natural micro-oxygenation thanks to the porosity of the concrete walls
